[edit] CiviCase

Organizes information into cases. Cases have a client and a set of case manager roles. A case can be split up into different actions with set completion dates. Case Dashboard shows upcoming events, open and closed cases, and recently worked on events. For more information see CiviCase Configuration Guide.

Pros: easy tracking of open and completed projects, can help prioritize steps, see who is working on which part.
Cons: must have pre-defined regular steps, must have predefined regular roles, customization may require back-end configuration.
Open questions: how much customization is possible? how is it searchable? how is the information exported/imported? is it possible to make groups from cases to do mailings for different types of people in each status? Reporting (see Database Report).

[edit] CiviContribute

Organizes information into contributions that are assigned to contacts. Typically used to track donation information.

Pros: CiviContribute can be customized and is integrated with CiviReport. Integrated with regular contact information. Export/Import is straightforward.
Cons: Tracks contributions in $ amounts.
